The Kilted Chef, Craig Wilson, took the flavours of Scotland to Hanoi in Vietnam earlier this month when he participated in a festival of food and drink featuring Michelin star chefs from across the world.
Mr Wilson, proprietor of the two AA Rosette-standard Eat on the Green restaurant, was the only chef from Scotland to take part in the Culinary Stars event, where he cooked alongside
12 internationally-renowned chefs.
Hosted by the Sofitel Legend Metropole hotel in Hanoi, the week-long event included cooking classes, a chocolate buffet, cheese and wine tasting, and an exclusive Macallan whisky dinner.
Mr Wilson’s menu, A Taste of Scotland, featured the finest local produce including Stornoway black pudding, smoked salmon washed with Udny-inspired Teasmith gin, and Aberdeen Angus braised beef cheek with a Talisker whisky jus.
The dessert featured Walkers shortbread and a Glen Garioch whisky ‘mist’.
Mr Wilson said: “It was a real honour to be asked to cook alongside some fantastic and very talented chefs. I am exceptionally passionate about Scottish food and drink so was very excited to showcase our wonderful produce on an international stage.
“I was made very welcome in Hanoi and the Vietnamese people loved the food I prepared – especially the haggis and black pudding which featured in my dishes.
“They loved the kilt and hearing all about the history and stories behind the ingredients we used and they learned some Scottish words in the process.
“It was a very inspirational trip. We visited the local markets and presented a number of dishes, blending food and art and bringing a taste of the north-east to the Far East.
“For the finale of the event I created a special vegetable and haggis spring roll with a whisky dipping sauce.
“As part of the MacAllan whisky dinner I addressed the haggis in the traditional way, which the guests loved and presented them with a haggis bon bon and whisky barley bree which was a real crowd pleaser.”
An award-winning chef with more than 30 years’ experience, Craig has cooked for celebrities including Sir Sean Connery and Sir Patrick Stewart.
